Raspberry White Chocolate Fudge

This decadent raspberry white chocolate fudge comes together easily with 5 simple ingredients. It’s easy to pull together in a pinch – whether you’re whipping this up to enjoy yourself or to gift to someone for Valentine’s Day. All you need is a handful of ingredients, a microwave safe bowl, and a 10×10 inch baking dish.

Raspberry and white chocolate is one of my all time favorite flavor combinations. This raspberry white chocolate fudge recipe is a tasty way to enjoy that flavor combo, and it’s super easy to make! I know making candy and confectionary goods can seem daunting at first, but fear not – fudge is one of the easiest confections to make.

To make this raspberry white chocolate fudge recipe, you’ll need a few simple ingredients.

  •  white chocolate chips
  • sweetened condensed milk
  • raspberry jam
  • freeze dried raspberries
  • salt

How to Make Raspberry White Chocolate Fudge

This white chocolate raspberry fudge recipe is super simple to make! No matter your skill level, you can make this easy peasy confection. 

Step 1. Mise en Place

If you’ve seen any of my recipes on here, you know the first step is to mise en place AKA make sure you have everything ready to go. This is your time to gather, measure, and make any preparations to your ingredients. Make sure you have all the equipment you need to make your recipe. This will make your cooking process much smoother and less stressful. 

TIP: line the bottom of your baking dish with parchment paper to make it easier to remove the fudge later!

Step 2. Melt it Down

In a large microwave safe bowl, stir together the white chocolate chips, raspberry jam, sweetened condensed milk, and salt. Microwave this mixture for about 5 minutes, stirring every 30-45 seconds. If you skip the stirring, you may end up with scorched chocolate chips instead of them melting nicely!

Step 3. Stir in the Raspberries

Stir the 1/2 cup of freeze dried raspberries into the fudge mixture.

Step 4. Pour into the Pan

Pour the fudge mixture into the pan, and garnish with additional freeze dried raspberries as desired. For this recipe I used a whole 1.25 oz bag of freeze dried raspberries total for this recipe.

Step 5. Chill the Fudge

Cover the fudge and let chill in the refrigerator for 2 hours, or until firm. 

Step 6. Slice and Enjoy

Slice the fudge into your desired number of pieces (I did 25 pieces), and enjoy!

How long is fudge good for?

Due to it’s high sugar content, this fudge recipe will be good for 2 weeks.

Why did my fudge dry out?

Improper storage of the fudge can lead to it drying out much faster than it should. See suggested storage instructions below!

How can I make my fudge thicker?

If you’d like your fudge to be thicker, you can prepare it in a smaller dish. It will still be the same amount of fudge, however it will stand taller.

Can I use a different kind of berry?

This recipe can easily be made with another kind of berry if you prefer! Use the same measurements of your preferred jam and freeze dried berries. 

Storing Leftover Raspberry White Chocolate Fudge

Store your fudge in an airtight container in a cool, dry place. Make sure to use an airtight container, or your fudge will dry out a lot faster than it should. If you live somewhere very warm, it may be best to store the fudge in the refrigerator.

Ingredients
  

  • 24 oz White Chocolate Chips
  • 14 oz Sweetened Condensed Milk
  • 1/4 cup Seedless Raspberry Jam
  • 1/2 cup Freeze Dried Raspberries plus more for garnish if desired (I used a whole 1.25 oz bag of freeze dried raspberries total for this recipe)
  • 1 pinch Salt

Instructions
 

  • Lightly spray a 10x10 inch baking dish with nonstick spray, and measure out the ingredients.
  • In a large microwave safe bowl, stir together the white chocolate chips, sweetened condensed milk, raspberry jam, and salt.
  • Microwave the mixture for 5 minutes, stirring every 30-45 seconds.
  • Stir in 1/2 cup freeze dried raspberries, then pour the fudge mixture into the baking dish.
  • Sprinkle crushed freeze dried raspberries on top of the fudge as desired, then cover and chill in the refrigerator for 2 hours (or until set).
  • Slice up your fudge and enjoy!
