For the cake:

  • All-Purpose Flour

  • Ground Cinnamon

  • Ground Star Anise
  • Salt
  • Molasses
  • Buttermilk
  • Strong Cold Brew Coffee or Espresso
  • Dark Brown Sugar
  • Unsalted Butter
  • Eggs

  • Cold Brew/Espresso or Milk

How to Make Gingerbread Latte Madeleines

Indulge in the magic of the season with these delightful Gingerbread Latte Madeleines! Follow these simple steps to create a batch of these festive treats that are packed with warm winter flavors.

Step 1. Preheat and Prep

Preheat your oven to 350°F and generously grease your madeleine pans. This ensures a smooth release later!

Step 2. Whisk and Mix

In a large bowl, whisk together flour, baking powder, baking soda, salt, and spices. In a separate bowl, combine buttermilk, cold brew, and vanilla.

Step 3. Cream Butter and Brown Sugar

In your stand mixer, cream together butter and brown sugar until light and fluffy. Gradually mix in the eggs, then drizzle in the molasses with the mixer running on low.

Step 4. Finish the Batter

Add the dry ingredients followed by the liquid ingredients and mix until smooth, scraping down the sides of the mixing bowl as needed.

Step 5. Fill and Bake

Evenly distribute the luscious gingerbread batter into each cavity of the prepped madeleine pans, filling them about 2/3 of the way. Bake for 15-18 minutes or until a toothpick inserted comes out clean. Allow them to cool for 5 minutes in the pan before transferring them to a cooling rack to reach the perfect temperature for glazing. To make this step easier, I put the batter into a piping bag and piped it into the madeleine mold.

Step 6. Make the Glaze

In a separate bowl, whisk together powdered sugar, vanilla, and 2 tbsp milk/cold brew until you achieve a smooth glaze. The consistency should be perfect for dipping the madeleines without being too runny or too thick. If the glaze is too thick, you can add more liquid 1 tablespoon at a time until you reach the desired consistency. 

*Use cold brew or espresso here instead of milk to achieve a stronger coffee flavor.*

Step 7. Dip the Gingerbread Latte Madeleines

Take each cooled madeleine and dip it into the glaze, ensuring a delightful coating on one side. Place the glazed madeleines on the cooling rack to set, creating a final touch that adds both sweetness and visual appeal to these festive treats.

How can I achieve a stronger coffee flavor?

To achieve a stronger coffee flavor in your Gingerbread Latte Madeleines, you can substitute the buttermilk for additional cold brew/espresso. You can also use cold brew or espresso as the liquid in the glaze instead of milk. 

How can I tell if the glaze is the right consistency?

The glaze for these treats should be somewhere between the consistency of Elmer’s glue and honey. You want to make sure it’s thick enough to coat the madeleines without running off completely, but thin enough to not just be a big glob on the top. Ideally you want the glaze to coat one side of the madeleines.

Gingerbread Madeleine Batter

  • 1 ½ cups all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder

  • ¼ tsp ground cloves
  • tsp ground star anise
  • ¼ tsp salt
  • cup molasses
  • ¼ cup buttermilk
  • ¼ cup strong cold brew/espresso
  • ½ cup dark brown sugar packed
  • ½ cup unsalted butter room temp
  • 2 large eggs
  • 1 tsp vanilla

Glaze

  • 2 cups powdered sugar
  • 1 tsp vanilla
  • 2-3 tbsp milk or cold brew/espresso

Instructions
 

  • Gingerbread Madeleine Batter
  • Preheat your oven to 350F and grease your madeleine pans.
  • In a large bowl, whisk together flour, baking powder, baking soda, salt, and spices.
  • In a separate bowl, mix together buttermilk, cold brew, and vanilla.
  • In a stand mixer fitted with a paddle attachment, cream together the butter and brown sugar until light and fluffy.
  • Mix in the eggs one at a time, stopping to scrape down the sides of the mixing bowl in between. Drizzle in the molasses with the mixer running on low.
  • Mix in the dry ingredients, then the liquid mixture.
  • Evenly fill each cavity of the madeleine pan(s), filling about 2/3 of the way.
  • Bake for 15-18 minutes or until a toothpick inserted comes out clean. Let cool for 5 minutes in the pan, then transfer to a cooling rack to cool completely before glazing.

Glaze

  • Add powdered sugar, vanilla, and 2 tbsp milk/cold brew to a bowl and whisk until combined. The consistency should be thin enough to dip the madeleines in without getting stuck, but thick enough that it doesn’t all run off. If you need to thin out the glaze, add more liquid 1 tbsp at a time until you reach the desired consistency.

Assembly

  • Dip the cooled madeleines into the glaze, and set back on the cooling rack to set.
